Mocha Marshmallow Cream Pops 

Game over: this is Popsicle heaven. 

I was so inspired when putting together my last post that I seriously couldn’t wait to create a popsicle recipe of my own.

I have never been much of a recipe creator, heck, I’m not even that good of a recipe follower! That’s why popsicles are so great: there is so much wiggle room with the recipe that you can make them however suits you best.

That being said, of course I wanted to make something that I knew I would personally enjoy. I’m a huge mocha fan – I mean, coffee and chocolate? Two of my favorite things! I also just so happened to have had some mini marshmallows on hand and I thought why not incorporate them?


  • 2 cans of coconut milk
  • 2 cups strong brewed coffee (I used Salt Spring Island Coffee – the BEST)
  • 2 tbsp caocao powder
  • 1-2 tbsp of honey (your preference)
  • 1 packet of gelatin
  • A dash of cinnamon
  • 1/2 tsp vanilla extract 
  • handful of mini marshmallows
  • pinch of himilayan sea salt



In a small pot, mix one can of coconut milk with the coffee and caocao powder, bring to a light simmer. Add honey (as much as suits your preference for sweetness – I only added 1 tbsp to mine), a dash of cinnamon, a pinch of himilayan sea salt, and half the packet of gelatin. Once all ingredients are mixed well and mixture has cooled slightly, fill popsicle molds with mixture 3/4 of the way.

Put molds in the fridge and allow to set slightly. Meanwhile, whisk together the second can of coconut milk with the vanilla extract and second half of the packet of gelatin. Top up the popsicle molds the last fourth of the way with this mixture. Top with marshmallows.

Add popsicle sticks and allow the popsicles to set for at least four hours in the freezer.

I consider these Mocha Marshmallow Cream popsicles a clean cheat, given the fact that there is no added sugar (only honey to taste). The gelatin and caocao add a certain degree of health benefits as well.

I can’t be any more happy with this first batch of popsicles this season, and I will be creating more throughout the summer! What kind of cool treats are you guys looking forward to making this summer?
